רשימת מלאי מתאריך 8 בג'מאדא א'-ת'אני של חנות למכירת פירות וסוכר, החומרים להכנת ממתקים ביתיים "עבור אלה שביקשו ליהנות מן הפירות במצב אחר מזה הטבעי". הרשימה כוללת כמות גדולה של סוכר רגיל וכמות קטנה של סוכר-סלע (סוכר גבישי), 100 ליטראות (פאונדים) של אגוזי לוז וכמויות קטנות יותר של גרגרי רימון, סומק, פיסטוקים ושני סוגי צימוקים. כן נזכרים בה עלי בננה, ככל הנראה לצורכי עטיפה. גויטיין מביא תרגום מלא של המסמך בהערת שוליים.
Princeton Geniza Project description: An inventory dated 8 Jumada II of a shop selling fruit and sugar, the ingredients for homemade candy "for those who wished to enjoy the fruit in a state other than natural." Lists a large amount of regular sugar and a small one of rock sugar, 100 pounds of hazelnuts and smaller quantities of pomegranate seeds, sumac, pistachios and two types of raisins.
